7# Bavarian Wheat LME (65% wheat malt, 35% base malt)
2# Pilsen Light DME

1 oz Hallertauer 60 min
0.5 oz Saaz 60 min
0.5 oz Saaz 5 min

1 tsp Irish Moss 15 min
0.5 oz Orange Peel 10 min
1 oz Coriander Seed 10 min

WLP400 Belgian Wit Ale Yeast

OG: 1.069
FG: 1.017
%Alc: 6.87ABV
IBU: 17.6
Color: 6.2

I figure it'll be something like a Witbock. Any suggestions? Can anyone comment on the differences between WLP400 and WLP410? Also, I've been doing 3gal boils. How should I adjust the recipe to accomodate that? Thanks everyone!
 
so after some more time messing with things, i thought it would be fun to (try to) keep the color of a true witbier while boosting the OG and ABV to bock levels. i tweaked a few other things too.

3.3# Bavarian Wheat LME (65% wheat malt, 35% base malt)
2# Pilsen Light DME
6# Wheat Malt

1 oz Bramling Cross 60 min
1/2 oz Saaz 20 min
1/2 oz Saaz 10 min

1 tsp Irish Moss 15 min
1 oz Orange Peel 10 min
1 oz Coriander Seed 10 min

WLP400 Belgian Wit Ale Yeast

OG: 1.072
FG: 1.018
%Alc: 7.09%ABV
IBU: 24.2
Color: 4.4

Am I on the right track here?
