I just picked up ingredients today for my first Belgian Wit to brew tomorrow. This will be my first non-IPA/PA brew and I'm pretty stoked! Here's the recipe...

5.5 Gallon Batch:

5lbs Belgian Pils
5lbs White Wheat
8oz Torrefied Wheat

Mash at 150 for 60 minutes (pretty sure I don't need a lower rest for white wheat....).

Hops are going to be all Motueka, 1/2 oz at 60, 20, 10, 5 (yes I know this may put me a bit high on the IBUs for a Wit, but I love me some hops) and then I'm thinking I'll dry hop with 1 ounce Motueka for 7 days just for the extra aroma. I may end up picking up some spices tomorrow, but I'm not sure. If I do it would be Coriander and a little Seeds of Paradise.

I was hoping to get WLP410 Belgian Wit II, but LHBS didn't have it so I went with WLP400 Belgian Wit.

If anyone has any thoughts or suggestions please share, otherwise I'm going to brew this as is tomorrow. :mug:
 
Oh yeah! I also have a 1lb bag of Flaked Wheat laying around. I'm wondering how throwing this into the mash would affect the beer. If I'm not mistaken, Flaked Wheat is used for body and head-retention, but so is Torrefied. Anyone more experienced with wheat beers have any input here?
