Hello all! I'm new to the forum and I was wanting to get some input. I just brewed my first batch of Cider. It is a Peach Ginger Lavender Cider. Recipe is below---

10 #'s Ripe Organic Peaches
8 oz Fresh Ginger
3 Gal of Water
3 #'s of Honey

Boiled together until peaches broke apart. Cooled down to 78 F. Added wine makers yeast. Got in glass carboy and am going to let sit for the next few days (maybe 3-4 days). Once I put in the secondary i will add about 1/4 to 1/2 cup of fresh lavender buds. What do you experienced cider guys think? Thanks
 
Oooops! Instead of 3 #'s of honey I meant 3 #'s of sugar. I plan to bottle with honey however.
 
Did you strain (most) of the fruit out of their before you put it in the carboy? The lavender will infuse very quickly so you will need to do taste tests to make sure the flavor doesn't get out of hand. Let it finish its fermentation before adding your lavender. That way you aren't trying to time flavor infusion with fermentation completion. This sounds really good by the way!
