My Double IPA

Working on my Recipe for a Double IPA. I realize that Double IPA's are kind of a new style of beer that has come out and because of that, none my beer books (or beersmith) has any information on the style. I have researched what I could find on the internete and based on that, I have come up with my own reciepe. I learned that Double IPA's should be High Gravity in order to handle the High Hop Levels. I have entered my information into Beersmith with my beer listed as an American IPA. So I wanted to run the states of my beer by the forums and see what everybody thinks before I try to make it. Make sure I am not going too far with it..

Here is the stats:

OG (Estimate): 1.094
FG (Estimate): 1.024
Estimated Color: 15.4
Bitterness: 115.0 IBU's
ABV (Estimate): 9.2


So, what do you think?

I also have not decided on which yeast I should use (need one that can handle high Alchohol levels). Any suggestions on yeast will also be appreciated.

My Ingredients :

12 lbs Maris Otter
2 lbs Victory
2 lbs Munich
1 lb 10L Crystal
1 lb 40L Crystal
1 lb Cara Foam
2oz Summit Hops (60 min boil)
1 oz Cascade Hops (30 min boil)
1 oz Cascade Hops (Dry Hop 3 days)
8 oz Malto-Dextrine
of course Irish Moss
and whatever Yeast I decide to use

I have modified it a little since I posted the first stats,

OG estimate is now 1.105
FG estimate 1.026
ABV estimate 10.3

I also made a mixtake while tipping: actual IBU's is 95.4

you need a low final gravity in order to make a double ipa drinkable.


1.010 to 1.015

a lot of people think you need a high final gravity to counter the bitterness, but it doesn't workout and it makes it very coying.


also you don't have enough late hop additions

Thank you very much for the links. Based on the information and style specs I found on the internet, I didn't realize that you had to put that many different hop varieties in a Double IPA. I figured as long as it was above 90 in bitterness, you were good. Great Information.

its not the ibus that make double ipa's its the late hop additions, hob backs, dry hopping.

were talking +1lb of late hop additions/aroma steeping hops for a 6 gallon batch.

also with dry hopping, don't be afraid to add several different types of hops.
