My big cider batch!

ok yall i just bought a bunch of apple cider from a local orchard and i will be starting 4 batches of 5 gallons each. I have 5 different types of yeast and want to know which 4 of the 5 to use. I have:

Safale S-04 dry ale yeast
Red Star Montrachet
Red Star Cote des Blancs
Red Star Pasteur Champagne
Lalvin K1-V1116

so which one should i leave out?

im debating on the Lalvin and cote des blancs and pretty dead set on the rest

Why not use a different yeast in each? If you don't want to do that, I'd say go with S04, it won't strip out the flavour like the higher attenuating wine yeasts will. Regards, GF.
 
Red Star Pasteur Champagne

I have a bunch of this stuff left over too. Alcohol content was pretty high in
2x1 Gallon batches. Kinda moonshine-ish. Any suggestions from the community as to what to do with all the rest I have left over? Not a huge fan of moonshine.
