I'd like to complile a short list of HBT's must brew beers.

One's you've tried and are definatley worth doing.
Heres the ones I can think of that I think I'll try


Edworts Apfelwein.
Cheeses Vanilla Cream Caramel Ale (not sure yet)
Dude' Pub ale (Boddington's)

What Else needs to go on this list?

On a sidenote, another must-brew is a hefeweizen. I think you positively MUST make a hefe at some point. Recipe? Doesn't matter... half wheat, half pils, and add an ounce of hops. It's just such a great brewer's beer. It changes character dramatically based on fermentation temp which, for most homebrewers, is a function of their environment. It really makes it a special "house beer" that can't be perfectly replicated anywhere else. You've got to do a hefe.

Besides, the blow off tube, the awesome fermentation, etc all have to be experienced. And it's ready to drink in 3 weeks!
 
What about Yooper's Dead Guy clone?
I just bottled a batch so I don't know personally. But I have high hopes.
 
I have to add Brewpastors 777 IPA. I just bottled it a week ago, but I can't stop myself from opening a bottle, it's just so good.
