Moving from 3gl BIAB to 5-10gl AG. Thoughts?

Do it. Get ag least 15 gallon kettles for 5 gallon, they also allow room for moderately sized 10gallon brews. Bigger if you plan to do mostly 10 gallon.
 
I agree with the above, having that much space to work with is awesome. 15 gallons will also let you get an 8 gal primary and ferment 7+ with a blowoff tube
