I am already mashed in with the following grain bill:
8# two row
4# Maris Otter
1# Crystal 20

Mash is at 153*. I am going to pitch a yeast cake of ESB.

I am thinking about the following hop schedule:
4 ounces Cascades at 10 minutes.
2 ounces of Mosaic Cryo hops at flame out.

I am planning to dry hop with
2 ounces of Mosaic pellets
1 ounce of Cascades.

This recipe should be 6 gallons to the fermenter resulting in 5 gallons in a keg.

I have Centennial on hand also, but feel it may not play a background role like I am hoping the Cascades will. I may also throw a quarter ounce of Magnum or Cascades at in at 60. I am not even sure that it's even necessary anymore?

Any thought or suggestions are welcome. The boil should start in about 60 minutes or so.

Cheers,
Tim

I'd do the mosaic at 3 mins left, then chill wort to 170*, add cascade and whirlpool for 20 mins. Dry hop on day 2 and day 4.

Am I correct in using Cryo in the kettle (1st time use) then the pellets for dry hopping? Also, is the amount of Cascades what you would use? I've got close to a pound of them.

You can, though most are saving it for dry hopping, they are around twice as potent as regular pellets, so less hop matter going into the fermentor for the dry hop.

Would anyone add centennial to the mix? If so, what amount? I have 3 ounces on hand for any kettle additions. I decided on a 90 minute mash because the kids are getting off the bus from their last day of school. The boil can wait a little while.

I'm probably in the minority these days but I like a 60 and 30 minute addition to around 30 or 35 IBUs. To push me farther towards the minority I don't dry hop either. I usually cool to around 175 and add a good dose of hops. Lately around 8 or 9 oz and whirlpool for 20-30 minutes. I still get a pretty juicy pale ale.

I ended up using the following hop schedule:
1 ounce Mosaic (pellets) at 3 minutes.
Hopstand from 170* to 150* of 1 ounce Mosaic (pellets) & 5 ounces of Cascades.

I am planning two rounds of dry hops with the following:
1 ounce Mosaic Cryo, 1 ounce Cascade
