I am already mashed in with the following grain bill:
8# two row
4# Maris Otter
1# Crystal 20
Mash is at 153*. I am going to pitch a yeast cake of ESB.
I am thinking about the following hop schedule:
4 ounces Cascades at 10 minutes.
2 ounces of Mosaic Cryo hops at flame out.
I am planning to dry hop with
2 ounces of Mosaic pellets
1 ounce of Cascades.
This recipe should be 6 gallons to the fermenter resulting in 5 gallons in a keg.
I have Centennial on hand also, but feel it may not play a background role like I am hoping the Cascades will. I may also throw a quarter ounce of Magnum or Cascades at in at 60. I am not even sure that it's even necessary anymore?
Any thought or suggestions are welcome. The boil should start in about 60 minutes or so.
