So yesterday I swung by the LBHS to pick up my Christmas present from my wife, supplies for an extract Mild and a PM Oatmeal Stout. Not thinking about the time that will pass between now and the time I can actually brew (early January) I went ahead and milled the grain bills. So, is this stuff like coffee...best mashed/steeped as fresh as possible or am I okay for the fairly short waiting period here? Is there anything I can do to maintain the freshness of the grains...maybe put them in the freezer?

Seal them us as tight as you can, and stick them in the freezer. Just try to make sure they are air tight. You wouldn't want your Maris Otter coming out in January smelling like flounder or something....
