What’s the best way to measure out yeast from a 9gram packet. I’m doing one gallon experimental brews and the packet is for 5 gallons. What would be the best way to measure out a fifth? Weigh it with a scale? What would you guys do?

Just used 2grams of some t58 last week, sanitized a small measuring cup and weighed it out.
Hopefully it works lol.

Most dry yeast packs are 11.5g for 5-6 gallons of worth. 9g would equate (roughly) to around 4 gallons, so divided out its a bit over 2g for each gallon (2.25g specifically).

It’s cider yeast - 9grams and it says it’s for 5-6 gallons. Should I just use a whole packet or measure it out so I can use the rest of the packet for another brew. I’d rather measure it out so I have a couple more brews out of one packet.

SafBrew, SafCider, and SafAle packets are usually propagated with extra yeast cells intentionally by the manufacturer.
It's always a safe bet to avoid under-pitching, but I'd much rather use a whole packet for 5-6 gallons of cider because fruit juices have little to no FAN (free amino nitrogen) as beer wort would to help propagate yeast during the growth phase.
Grain worts will have proteins, lipids, and complex sugars with minerals that help the yeast grow faster, but with that said, if you're only doing one gallon test brews, one half a packet of yeast to one gallon of must is plenty.
I've sprinkled one half a packet of dry ale yeast per gallon of cider with no problems, as long as the yeast was within the proper dates for use.

Okay gotcha. Using a half sounds good to me. I’m doing experimental cider brews and dont want to use a whole packet if I don’t have to.

I'm really paranoid about sanitation when it comes to yeast. I don't use partial packets, but if I did, I think I would use this method:
- Sanitize the packet and scissors - let dry, covered (Since the outside of the packet ideally won't touch the yeast, this step could be skipped if too much of a PITA)
- Cut off the end of the packet
- Weigh the packet with yeast
- Shake out some yeast into wherever you will be using it
- Weigh the packet - note about how much more you need
- Shake out more yeast and weigh packet
- Weigh the packet - Repeat until desired weight is obtained

That should minimize contact with unsanitized equipment.

I told you I'm paranoid.

A packet of dry yeast is too cheap to worry about getting the exact amount pitched. Guess how much to pitch and buy a spare packet just in case you run out before you get to the last gallon batch.
