Malting your own grains

Cheers everyone,I wanted to attempt to malt my own grains,like buckchweat or millet,and I was wondering if the drying step is really necessary?let's say my grains are all malted by Friday,then I just mill them wet with my corona mill and brew with them right away,in theory make sense,will just require planning and logistics.any thoughts?
 
I would suggest watch this . Especially if you're trying to malt GF grains. From what I've heard about the process with these specific grains you need to be worried about fungus. Milling wet grains sounds like a bad idea to me.
