Title says it, which would you choose and why? Making a wee which will have a fairly high OG.

I have some Nottingham that I harvested from a recent chocolate oatmeal milk stout I made. I spun a starter and it’s sitting in my fridge right now ready to go.

I also have a dry packet of US-04.

Ready....go!
 
S-04 would be my choice, but only if you can keep it at 63-64 degrees. Nottingham will likely attenuate too much for the style, or at least the way I like the style. In fact, S-04 may attenuate too much for my personal liking as well. I like Wee-Heavies to be chewy.

Of course if you want some esters and also great attenuation, you can give it a full 2 days of visible fermentation with the S-04, and then toss in the Nottingham.

Reading an old thread it suggested 10% as the upper limit and to pitch a lot. They were talking about a Barleywine and pitching two packs.
