10 Gallon batch

10# Pale 2 Row
10# Vienna
5# Red Wheat

Hops can go a lot of ways: 30-40 IBU of....

Magnum, or
Saaz, or
Simcoe, or
Columbus

1 oz Bitter Orange peel @ 5min
1 oz Coriander @ 5min
2# Honey at flame out.

also...this beer needs a name!:mug:

Of your hop choices I much prefer Simcoe. Other than that I think the Vienna malt will give this beer a nice malt backbone
 
How about "Weinachtsbier?" :D (I know it may not be the poster child of the style, but it's in the spirit of the season)

I also second the Simcoe.
