If you want super simple Northernbrewer's Patersbier is really good. I've made it several times, I think it would be classified as a Belgian pale. I also came up with this recipe as a break from my higher gravity Belgians and I was really pleased with the result, a hit with both beer and wine lovers I know. It's for 10 gallon so just cut it in half. I was planning Styrian goldings but this is what the LHBS had:

16 lbs Pilsner (2 Row) Bel (2.0 SRM) Grain 1 85.3 %
1 lbs Caravienne Malt (24.0 SRM) Grain 2 5.3 %
1 lbs Munich Malt (9.0 SRM) Grain 3 5.3 %
12.0 oz Biscuit Malt (23.0 SRM) Grain 4 4.0 %
2.00 oz Styrian Bobek [4.90 %] - Boil 60.0 min Hop 5 19.9 IBUs
1.00 oz Styrian Bobek [4.90 %] - Boil 20.0 min Hop 6 6.0 IBUs
1.00 oz Styrian Bobek [4.90 %] - Boil 3.0 min Hop 7 1.2 IBUs
Trappist High Gravity (Wyeast Labs #3787) [124.21 ml]

Pitched at 66 and let it rise to low 70's by end of fermentation
mashed at 151
10 gallons
OG 1.053
FG 1.010
