I'm in between brews for a bit, but my mind is continually grinding threw the brewing process.

The LME I've been using from the LHBS comes in 3.3 lbs bags (Briess). The recipes I've brewed and the ones I have on the back burner in my growing recipe book, generally call for 6 lbs.

Would using two bags (6.6 lbs) effect the wort i.e. increase the OG, etc?

In a standard 5gal batch 6.6lb of Generic LME should yield about 1.042, 6.6lb will give you 1.046, so that's an increase of 1.004. So it will change gravity, not by much though, if you don't have a problem with this you could just throw in some more hops to balance it out. But check this, using 6.6lb with 5.5gal will yield around 1.042, this gives you a clearer beer because you can leave 1/2gal in the fermenter and rack 5 gallons of clear, or at least trub free, beer into the secondary, bottling bucket or keg.
