I just received my order from AHS that I placed last Wednesday. Can I make a starter tonight and pitch the yeast into the starter right away or do I need to refrigerate it for some time before I pitch into starter?

I have only used a starter twice and both times it took about 20 hours from the time I pitched the yeast into the starter to the time the yeast stopped growing and started making CO2. So, I have learned to start the starter the evening before I brew.

If you are not planning on brewing that soon, refrigerate the yeast.

I prefer to make a starter, cool it to settle the yeast, drain off the beer, and then slowly raise the temp again to pitch as I do not like to toss in a liter or two of starter beer into my batch.
