OK, I started my first batch last night pitched yeast about 10 hours ago everything seems to be going well yeast is working (Pasteur Red yeast). Which is better cheese cloth or lid with air lock I know the yeast needs plenty of o2 to perform well but would the lid with air lock be better because it's safer to keep wild yeast out? Opinions Please.
 
Ok, Do I need to leave cloth on the whole time during primary. I've been keeping the basement around 70 degrees is that about optimum temp.
 
What kind of wine are you making? If its a red get a cloth better than cheesecloth to keep the gnats out, a flour sac or dish towel is better than cheesecloth. If its a white you might want to put it into a carboy as soon as the most vigorous fermentation stops. WVMJ
 
It's a red. Welches Concord Grape 5gal. The yeast is really working in the 5gal primary :D. I started a 1gal batch with what I took off the 5gal batch that I got to sweet used Red Star Montrachet it's starting to take off this morn. Thanks.
 
I just use a old polyester "running shirt" belted around a bucket. Passes air, easy to sanitize, keeps dust/baddies out.
