So I was throwing together a quick small batch last night using some stuff I had sitting around. The beer calculus website kept freezing my computer, and it was getting late, so I decided to forge ahead without running the numbers. I'm trying to make a simple yellow beer (something I can drink while I'm checking stuff off the honey do list on a Saturday afternoon). Here's what I did:

1.5 pounds extra light DME
1 pound rice syrup solids
.5 pound amber DME
.5 oz Cascade 8.9%AA 15 minutes
.5 oz Willamette 4.9%AA 5 minutes

1 gallon boil for 15 minutes. Topped off to 2.2 gallons total. Pitched half a package of US-05 yeast dry. OG measured at 1.051.

So I ran it through beer calculus today and the calculated OG matches my measurement. But, it tells me that my IBUs will only be 12.5. Is this going to end up too sweet? Should I toss some hops in the fermenter? Since I used up all the ingredients I had laying around, I'm probably going to leave it alone, but thought I would see what you all think. I'm guessing that this will be light and flavorless enough that it will not matter, but maybe not?

Adding hops to the fermenter will not add any bitterness, just aroma. There are hop extracts available that will add bitterness, but I have never used one.

I wouldn't worry too much about it. The beer will be sweet, and not your best batch, but it is a small batch and a learning experience. Next time, I would add hops earlier in the boil to provide bitterness, even if some flavor or aroma hops need to be sacrificed.
