Hi there,
This is my first original recipe, 3rd all grain brew. I want a relatively chewy, resinous, not overly sweet IPA suitable for winter: spicy, warm, dank, earthy evergreen (as opposed to citrus/tropical, crisp, light, etc) with nice malt backbone. Looking for some last minute feedback, esp on grain bill and hop "strategy"; I need to grab my ingredients in the next couple of days. Thanks!

Canadian Winter IPA
5 gallon batch/18.9 litres

6 pounds Superior Pale Ale (Canada Maltage)
6 pounds 2-row
1/2 pound Munich
.4 pounds (200g) Caramel 60

1/2 ounce Amarillo first wort
1/2 ounce Columbus 60 min
1 oz Perle 15 min
1 oz Amarillo 10 min
1 oz Chinook 5 min
1/2 oz Columbus 5 min

flameout/20 min hopstand:
1/2 oz Chinook 0 min
1/2 oz Columbus 0 min
1 oz Amarillo 0 min
1 oz Perle 0 min

Dry hop (5 days):
1/2 oz Amarillo
1/2 oz Chinook
1/2 oz Columbus
1 oz Perle (2.5 oz dry hop total, total hops: 9.5 oz)

1 tsp Irish moss
5.2 ph
White labs San Diego WLP 090 super yeast (+ starter)

60 min mash @ 149
20 days primary @ 66-67, dry hop last five days (in primary), then bottle.

Brewer’s Friend says: 66.66 IBU, ABV 6.66% (!!!)

Thanks to those who gave me feedback on the earlier version(s) of this work in progress! :mug:

If u dont want citrisy id swap ether the columbus or the amirillo for simco so u get piny

Thanks--would have loved some (like a pound or two) but my shop is out of Simcoe. I don't mind some citrus, but I'm trying to avoid the strong all-citrus lemon zest effect you might find in a citra/cascade/centennial beer, which I prefer in a summer IPA. Any other piney, earthy hops out there?

What if I turn down the Amarillo and bring in some Nugget (10 min 5 min 0 min late additions/dry hop)?

You could try comet. It's got a bit of grapefruit to it but nothing like amarillo or galaxy or citra. it's often described as very "wild" tasting... grassy, dank, piney, earthy. It's one of my favorites in an American IPA, gives it another layer you don't often get.
