For the old money, seasoned lambic drinkers: if you wanted to age a Cantillon beer for a very long time, say 15-20 years, which yearly offering would you choose?

My first child was born this year and I wanna find something with a 2015 cork or label to age until he reaches a certain level of maturity.
I really, really like old Iris. The only others I'd go that long with would be the standard geuze and GcB.

Mind sharing a few stores to check out? My wife will be in Chicago for work in 2 weeks.

I saw it on the shelves a few weeks ago at Bottles and Cans, but they're decent updating beermenus and it's not currently listed (I think only bars have it listed currently). There are probably some other stores that might have it that don't use beermenus (Beer Temple)...

Anyone got anything to add?

So finally tried the De Cam Framboise. I thought it was great and an absolute sour bomv if you like that. However i found it to have way too much carbonation. IMO it could benefit with some time on it. Overall Id definitely seek it out. Cant say i liked one over the other although i do think De Cam Framboise has a stronger raspberry profile

I have some 2009 Framboise, opened one a couple of weeks ago. It was absolutely amazing. One of the most complex Framboise out there, especially as it warmed up. Their reg Geuze is awesome too, fresh or aged.

I tracked down De Cam on my trip and loved it. It was more expensive than most other stuff I found though. Is that generally the case?

bottle variation is the phrase of the day here -- the last one I opened was almost dead flat, but definitely a fruit bomb with really well balanced tartness + funk.

according to cantillon:

"In Brussels, the average night temperatures for the begining of November are around 5°C.
We programmed two brews for this week but we have cancelled them because of the warm temperature. Night temperature for this week will be between 12°C and 14°C, too warm for a correct cooling.
We just began the season and we already have to stop it for a week, traditionnal Lambic is also victim of the global warming."

BiaB has a 1 bottle limit on Bio. And it's not 1 bottle per transaction, it's 1 bottle per person period (or some extended period of time).
I purchased 1 bottle of bio last week, then it sold out, now it's re-listed but I'm unable to add it to my cart when I'm logged in (it says max amount already in cart, when I have 0 in my cart). However if I log out of my account and add to cart as guest I can add 1 bottle. But if I try to log back into my account it removes it from my cart.

Thus, it appears that here are the days when Bio is 1 bottle limits per person for some extended amount of time :(

It used to be almost twice the price of most other geuzes. Sadly, it seems some are catching up to De Cam now.
A Bottle of de Cam geuze is slightly less than €10. Drie Fonteinen is about 6 or 7 so it's not too bad yet. Girardin goes for €3,50. The prices aren't rising that quickly over here.

LOL.

(Not at you, at the fact that this is what loons have come to)

That Loon madness has made gueuze so hard to get is pretty annoying. I honestly probably haven't had a bottle in over a year. So now I just want to refresh my memory on it, since I've been drinking mostly geuze from the other blenders and now I have to do all this hoop jumping to get any. Bah humbug.

I'm just grateful that,
1. They are expanding production.
2. Their gueuze isn't really better than 3F, Tilquin, and even Hanssens.

And Girardin and Boon MP, if you're into that sort of thing.
Exactly. Silver lining for me is that because of the PITA it has become to get the likes of Cantillon and 3F I've been drinking a ton more of the other producers like Boon and Girardin and I couldn't be happier. It's given me a new appreciation for beers I previously took for granted.

Yeah, I'm very happy to be able to get a variety of other stuff. I mostly drink Boon. CG was a big touchstone for me in the development of taste for these beers, back when it was a shelf turd. Now I'd just like to get reacquainted with it, now that my taste has shifted from "sour" to mineral, aged hop, complexity, etc.
Really bummed about Girardin as well. Black label blew my mind when I first had it, as my opinion of Girardin at the time was defined by White Label, and it's become a favorite.
