And are you ok with the fact that there are those in Belgium using the term lambic on product that does not use turbid mash? does not use only aged hops? is not spontaneously fermented?

How about those that are not fermented in oak? how about those that are not aged on the traub? how about those that are pasteurized and backsweetened? how about those that use artificial flavors and colorings?

If you are going to define what it is required to call your product "lambic", you should look at all the production methods currently practiced within Belgium. Not all of them are as romantic as Cantillon.


To be honest, I don't care levifunk. I'm going to drink the ones I like and I don't give a **** what they are called as long as I like them. I was simply reiterating other opinions in the thread and trying to explain some of the backlash to the guys posts. No need to get your panties in a bunch.
 
while we're kind of on the subject of Lindemans, does anyone know what gueuzeries they supply the base Lambic/wort for? I've heard conflicting stories...

I think everyone that doesn't make their own lambic uses some Lindemanns. Their actual lambic is pretty good, as evidenced by Cuvee Rene.

And since trinity can make one PERFECTLY in 7 days why even worry about it?
 
This is a question for those that have had the new batch of hommage, especially anyone who has had it next to the old batch. How is it drinking, and if you had both how is it in comparison to the old. I recently had the old batch and just got batch 2

I think the consensus at the Dave tasting was that B2 is a bit better, less sour, more fruity. That may have just been my person thoughts, though.

I've only had b2. I had that 1.5 months ago. I thought it was incredible. It had a ton a jammy raspberry to it. What really surprised me was how funky it was being so young.

Drinking this right now. Probably the 4th GB I've cracked or thereabouts. Anyways, have you guys noticed bottle variation on these? I remember this being a little more sharp and mineraly with lower carb, but this one blew the cork out of the bottle as soon as I undid the cage, and the taste seems different from how I remember. More green apple in this bottle.
 
All of the GB i have had were very well carbonated. They all had that mineral and sharp acidity. Still one of my favorite 3F with A&T

Just had it today, it was really good, has alot of funk, and just enough pucker to let you know what you are drinking. the fruit was there but in the background.
 
I had one the other day - didn't think it was super minerally. I split it (I wish I hadn't, but girlfriends who love beer are worth it) so may not have got as much into it as I would've liked.

Found it very funky. Blue cheese, tasty cheese, hay, all that crap. Loads of summer fruit. Quite well carbed.

I have another bottle which I'm keeping for a bit... and I'm tempted to order another half dozen. I thought it was a real great beer.

That's more how this bottle is, and in addition there's lots of green apple. Previous bottles have had really prickly seltzer-like carb and mineral taste, this one is more balanced but less aggressive. A fantastic beer in both forms, that's for sure.
 
The last 2 that I've opened shot the cork out with 2 twists of the cage. I have noticed some variation over the dozen or so that I've had. All have been good. That 4 year lambic really brings a whole new level of complexity.

So in my quest to figure out Bruocsella, I set up a trade for three bottle dates that weren't in my spreadsheet, and one that wasn't in the Cantillon Batch List. Left to right they are
Label 2007, btld 08/26/2010
Label 2008, btld 09/07/2012
Label 2009, btld 10/10/2012

Two curiosities here...the brewery tells us this lambic is bottled at three years, but the 09/07/12 bottle with the 08 label would be over three years old at bottling. I don't expect them to be exact here, but I've also got bottles that seem to be under three years old and as old as four years old depending on brew date. So does the three year old date hold true or is it whenever they feel like bottling?

Second, the 08/26/10 bottle is the same date, label, cap, and color as the bottles I received a couple weeks ago that we're mislabeled Fou'Foune. Out of all the bottles in the batch list, only three were bottled in August. 2003, 2009, 2010. We know that FF is always bottled in August, usually late, and I'm wondering if anyone else out there has ever opened a bottle of 08/26/10? Shaking the bottle reveals at least a fair amount of carbonation as well. I'm beginning to wonder if 08/26/10 Bruocsella even exists. Thoughts?

I wish shipping wasn't so crazy expensive; you have to buy a bunch of bottles to make shipping worth it, but even then it seems more than Etre shipping by a good margin.

I played around with my cart for a while - if I had a bunch of money to blow on Loons I'd probably do it just because it's nice to be able to get FF, LP, St. Lam, etc. all at once. But the prices wind up being basically on par with MBC, plus you have to factor in the customs risk...

Still very awesome of you to post this!
 
I ordered some Fou from beer planet a couple years ago. Their packaging at the time was terrible. I was shocked the beers made it to me. I'm pretty sure they were boxed up with nothing but styro peanuts and the box wasn't even full of peanuts.

I don't plan on ordering from them again because they are expensive and I wouldn't feel comfortable that the box would make it to me.
