I think there's a difference between carbed and poured hard with some foam remaining. It may very well pick up a bit over time or there may be some outlying bottles.

Does all Doesjel eventually get carbed?

Negative. Some might, some might not. Het mysterie van de geuze.

Would Doesjel that carbed just be the same as a batch of OG?

Indeed. As Doesjel is a blend of lambic that didn't carb.
 
This was really nice. Most recent bottling I would think. DX 2016 on the cork. Bright and citrusy with slight funk. Not a ton of carb. Didn't really even pop when I pulled the cork out. Enjoy with pork cutlet and cous cous. Damn tasty.

Any thoughts on the best vintages of LPK from the past 3 or 4 years? Proven impossible for me to buy upon release, so figured I might trade for one, and might as well make it the most recommended vintage...

If you like them fruity, go with a fresher one. If you like dat funky and tart lambic flavor, go with an older one. No standouts among recent LPK vintages IMHO, it's pretty stable. Doesn't Jean himself say he prefers it with a year or so on it so that the lambic comes though more? Me, I'm a fruit guy, so I usually like them best fresh.

But it's never a _bad_ beer, so any vintage will do!
 
Jean told my friend and I two years on the lpk before the beer is balanced enough for his tastes...

2008 Sticker has consistently been my favorite vintage so far. Always seems to have the right balance of fruit and funk.

I thought the same thing after I poured as well. I did try to pour it fast out of the bottle to see if I could get a little head on it since I got no pop on the cork. All that settled and the those bubbles were gone within a min or two. It was pretty still after that.

Just had a 2012 sticker that GregorySingh opened over the weekend and it was fantastic. A nice balance between sweet candy fruit and funk. Just delicious.

I do see that cherry lambics are all draft pours, and krieks are bottle pours.
Kriek is bottle refermented. They cherry lambic is bag lambic, so still and in mostly unblended. The Boon is straight of the vat and tastes like juice. I wonder if that Tilquin Cherry Lambic is really a thing or a typo. Maybe Mure again?

Bummed to not be going this year. The World's best beer festival and the panels and such this year look pretty amazing, too.

I assume you mean Tilquin Cherry lambic...

thanks for the feedback, everyone. good to know the quality has stayed consistent, it seems. 2008 was definitely the year that made me go "WOW" for the first time ever for a kriek, and even the bottle i shared at a tasting around new years was still phenomenal, with tons of cherry despite the age (i've kept it in my basement the whole time tho, so the conditions are good, but was still surprised how good it was). just can't seem to catch a break when trying to acquire any batches since 2009 around release time.

Our traditional lambic beers are unique. Nowhere in the world, except in the Pajottenland and the Senne Valley, one can find such a concentration of breweries which still practice the ancient process of spontaneous fermentation. Lambic and Gueuze are part of the heritage and history of the Pajottenland. The festival aims to promote these beers both at home and abroad, and is also known to draw the attention of the local population on the unique character of these regional products.

The International Gueuze & Kriek Festival Payottenland, also known as the Night of the Great Thirst, is organized every two years. The next edition will take place on Friday, April 22, 2016 in Itterbeek (Dilbeek).

From 7 PM onwards, visitors can savour Lambic, Gueuze, Kriek, Faro, Framboise and numerous other Lambic beers from all producers of the Pajottenland and the Senne Valley (Boon, Cantillon, De Oude Cam, De Troch, 3 Fonteinen, Girardin, Hanssens, Mort Subite, Lindemans, Oud Beersel, Tilquin and Timmermans) will be presented. As was also the case during the previous two editions, attention is also paid to foreign beers, which are also produced according to the process of spontaneous fermentation and with a coolship. These beers are not Lambic beers, but they can be considered as distant cousins of the brews of spontaneous fermentation of the Pajottenland and the Senne Valley.
Show your country's flag at the International Gueuze & Kriek Festival!

The Night of Great Thirst was from the very beginning a truly international beer fest. Gueuze lovers from the US and the UK were at the cradle of the first edition. This year we celebrate 12 years Night of Great Thirst. And we would like to show the local people that it is a real international gathering of lambic enthusiasts. So bring your country's flag and let's make of the 7th Night of Great Thirst a colourful event!

Admission to the festival is free.

During the festival, tokens are being sold. These tokens are valid for the purchase of beers, tasting glasses, t-shirts... Draught beers are sold by the glass. Behind each counter is indicated how many tokens are needed to buy a specific beer.

Onze traditionele lambiekbieren zijn uniek. Nergens ter wereld, tenzij in het Pajottenland en de Zennevallei, vindt men een dergelijke concentratie aan brouwerijen die het eeuwenoude procedé van spontane fermentatie nog toepassen. Lambiek en geuze zijn een stukje geschiedenis van het Pajottenland.

Het internationaal geuze- en kriekfestival van het Pajottenland, beter bekend als de ‘Nacht van de Grote Dorst’, wordt maar om de twee jaar georganiseerd. De volgende editie vindt plaats op vrijdag 22 april 2016 in Itterbeek (Dilbeek).

Dit evenement heeft als doel om deze bieren niet alleen bekend te maken in zowel binnen- als buitenland, maar ook om de aandacht van de inwoners van het Pajottenland en de Zennevallei te vestigen op het unieke karakter van de streekproducten.
