I've had Unity Vibration Kombucha Pale Ale from Ypsilanti, Michigan and it's delicious. It's like a combination of kombucha, sour ale, and a pale ale. I was wondering if you could ferment a beer using a kombucha 'mother'? Any insight?
 
Not really, the bacteria in the scoby would turn the sugar to acedic mostly I believe. I have done one though by first making a normal batch of green tea kombucha then when its around 1.040 add EC1118. It came out nice like your describingand was about 4% (I haven't had that one yet but I have had the one at New Holland.)
 
I found this Thread while searching for a way to brew my own kombucha beer after trying and loving unity vibration ginger. I recently started brewing kombucha but I'm not sure how to combine it with beer. This is a fairly old thread, anyone figure out a good way to do it yet?

I'm still looking. I might try to make 7 1/2 gallons of kombucha to use as the water in a no boil fruit beer. I'm not sure how to make sure that no SCOBY is in the beer, I want it to be stable and not become bottle bombs or turn to vinegar. Maybe use champagne yeast??
