Brewing my first Kolsch tomorrow. Just made a starter. Can I keep this starter at 75 which is the ambient temp in my house as long as I decant the beer before pitching?

I can either keep it cooler and not use the stir plate or ferment at room temp on the stir plate. I think I should use the stir plate but I need some expert advice.

I will ferment the actual beer lower of course.
