Did you post a recipe for this anywhere? Sounds awesome! I just ordered the fixins for an American wheat, and was going to do cherry or raspberry puree, for the wife, but kiwi sounds WAY more interesting...

The recipe is in the extreme brewing book, I made a few small changes, here is what I did.

.5 lbs torrified wheat
6 lbs wheat dme
1 oz hallertau 60min
1/2 oz hallertau 10min
1/2 oz corriander 10 min
irish moss 10min

4 lbs fresh peeled and cubed kiwi added at flame out (in a bag) let steep for 20 min, cool wort and transfer to primary..transfer the fruit in the bag as well.

I let it all sit in the primary for 3 weeks then bottled. This Wit turned out great, very suttle kiwi finish, very crisp finish

Brewed mine last Sunday. I brewed the extract version about 4-5 years ago and remember it being very good.

Notes:
------
Brew like a normal extract recipe. Add the kiwi at flameout. Stir wort and let kiwi steep for 20 minutes before chilling. Chill wort to pitching temp. Transfer wort and fruit into the fermentor, and pitch. It says to give it 15-20 days in the primary. When the kiwi's rise to the top and are almost white in color that will signify that they have been successfully stripped of flavor and sugar.

Did you mini-mash the wheat with the DME?

Sounds great, I may have to do this next month!

No, I followed the recipe, which was to add the grain right away and remove when the water temp raises to 170...From the research I did the torrified wheat can still add head retrention and mouth feel without mashing it...I don't know how true that is, I just followed the recipe and it turned out great.
