Hey, I am making my first wine kit and want to keg it. I have been reading what people do and it sounds like my typical beer gas (for nitro beers) would be an option. Practically speaking, if I set my beer gas regulator at like 2 psi with a faucet directly on the keg post or with a tiny length of tubing, would that push it adequately and result in a low enough CO2 level to be considered still? My calculations are telling me I would be under 800 mg/L CO2 if I connected it up directly to the keg with 2 psi and 3:1 beer gas mix, but i could be way off.
 
1 bar = 14.5psi at sea level.

½ bar = 1g/l according to the article you provided.

2psi may not be enough to push, depending on the rise and resistance. Keep it under 7.5psi and you should remain still.

I'd probably also suggest to only have it on gas when serving.
