so i just keged my first batch and everything went well except the beer itself. my poor bilgium tastes like jack and coke and pure burnt oak. i gagged a little when i took my first gulp. i think i over did the oak cubes by alot and im wondering if i should dump it or let it sit and hope the flavor calms down? its been in secondary for three months. and on oak cubes for two that were soaked in jack daniels and dried in the oven.
 
I would bottle it and leave it alone for several more months.

Oak is a very tricky creature.

I feel that it should mellow over time.
 
How many oak chips?

Next time I would suggest tasting the beer weekly using a theif and then racking from the oak when you like the end product.
