I have not done All Grain yet, but was planning to in a few weeks. I bought the ingredients, foolishly not confirming I have everything I need to do it. I only have a 7.5 gallon brew kettle. From seeing some youtube videos, it seems I need 8gal at a minimum. The grains for the recipe I have total 14.75lb. That's not gonna work, is it?

If not, where is a good resource for those large, round coolers that allot of people use? And is there anything else I will need? I got the bag. Not sure if there's anything else I definitely need.

I was going to say that you could get one of those comercial drink coolers from Lowes or Homedepot, then I say your in NYC, and I'm stumped. And your link is the right sort of thing. I'm not sure how you'd use that with heating water and all.
 
It would be close. I did 5 gallon brewing in a 7.5gallon pot up until recently when I got a 15gallon pot. Fermcap s is your best friend. 14.75lbs of grain at 1.25quarts water per pound is just over 4.5gallons water to mash. Then drain to bucket and sparge with remaining water needed to reach your pre boil volume. I usually boil off 1.5gallons so would need 6.5-7 gallons to start. It will be close but like I said using fermcap s and watching vigilantly it can be done.
 
Can you split your boil just until after hot break then add together and start your hop schedule? I've had to do that a few times and it worked good for me.

What brewhouse efficiency is the recipe written for? I've found that I need to reduce the amount of grains the recipes call for by quite a bit since my brewhouse efficiency is much higher. You might be able to duplicate the beer by reducing the amount of grains and then you would have plenty of room to mash.

The alternative is to mash with less than full volume and then sparge to volume. I do that often with a kettle that is a bit too small for my batch size. I'll withhold the sparge until the "first runnings" have come to a boil to help manage the large amount of foam, then add the "second runnings" and bring the wort back to boil, creating foam again but a lesser amount which I can easier keep from spilling over. This takes a few minutes longer.:mug:

This is what an exceedingly large number of people use. Just set up a stainless braid or false bottom and you are set for your mash!

Are you going to do a BIAB batch or not. Since you posted in the BIAB section I would assume so. If you are, you don't need a cooler, you don't need to use the 4 cup pyrex glass, all you need is a big pot and a bag. No cooler, no braid, no stuck sparge. Do a google search for 10 gallon pot and choose one. Buy a bag to fit. Wilserbrewer makes custom fit bags and would be a good source for that.
 
Your issue is a small kettle. Buying a mash tun doesn't solve that problem.

With a sparge, your 7.5 gallon kettle will work BIAB. A larger kettle would be more convenient.
