Started a 5 gallon batch of cider with freshly pressed apples from a local orchard with no preservatives. Added to fermentor and added 3 crushed campden tablets and 2.5 of pectin enzyme. Waited 24 hours and added 5 tsp of yeast nutrients and 1 vial of Whitelabs cider yeast. Dateon yeast was best if used by 1-5-13. SG was 1.060 at68 degrees. Plan to keg so ill cold crash burst what FG should I watch for? What would've theFG ifi just let it run all threat out?
 
Never used that yeast myself but the FG will probably hit a little below 1.000 when totally dry. Just taste it periodically until you hit your desired sweetness. If you overshoot, go ahead and crash it and then you can backsweeten with concentrate.
