Hello, I gave 1 gal of honey (12 lb?) And a,3 gal carboy. Is that a good mix or do i need to dial back the honey a bit? I've only made Mead one gal at a time. I'm new here so sorry if this question has been asked and answered.
 
12 lb in 3 gallons will have a starting gravity of about 1.140 and potential alcohol of 18%. That's a lot unless you're a very experienced mead maker. I'd dial that back to 9 lb and use the remainder in one gallon.
