Hi, I was reading about the recommended range of FAN (free amino nitrogen) levels needed in wort for a healthy fermentation and I was wondering if there is any way to measure its concentration from the comfort of home? Also, does anyone know if the FAN can get out of wort or it stays in wort once it's in there?

I can't see a way of the FAN to get out of the wort. N2 isn't FAN .... I suppose it could get into the yeast and then drop (flocculate) but it won't evaporate out, WAY to heavy to do that.

As how to measure? I'm not sure you can do that at home. there are 'standards' as to how much each type of beverage starts with. I don't recall the exact numbers except to say mead has hardly any.

Usually, FAN is indicated on a malt data sheet. If it isn't e-mail the maltster and ask for it.
