My two favorites are Great Lakes Christmas Ale and Sierra Nevada celebration. Both are very different beers and both have clone recipes.
Nope, there really isn't. In fact Belgian Christmas ales and English Christmas ales are two rather different styles. Is there a particular commercial example you want to use for inspiration?
The recipe for my Christmas ale is:
8 lbs 2-row
1/2 lb Caramel 120L
1/2 lb Extra Special (Roast) Malt
4 oz Chocolate Malt
1/2 oz EKG and 1/2 oz Fuggles @ 60 min
1/2 oz EKG and 1/2 oz Fuggles @ 7 min
Add spices to taste at flameout, add more in secondary if necessary.
S-04 yeast
I've used different combinations of vanilla, cinnamon, nutmeg, orange zest and lemon zest in the past, but I'm still tweaking the spices. Always a beer that gets rave reviews, though.
Be careful of nutmeg, though. A little goes a long way.
