Sorry about the headline, I'm probably being paranoid...
I have a Belgian String Ale that was in primary for 2 weeks and has been in secondary for another 3. The SG is steady (I forget where but I believe it was 1.016). I added Gelatin to it a few days ago after I cold-crashed it. Did I crash and fine too soon? Is is too soon to bottle? Do I need to re-pitch for carbonation?
Here's the reason for the dilemma... I have an American wheat beer that is coming up on 3 weeks in primary. I would like to move it to the secondary carboy to add fruit and I only have ONE secondary conditioning vessel. I can't spend $35 on another fermenter right now.
If I bottle the Belgian, will I eff it up?
