I made a batch, but my wort is extremely hot and I don't have time to do an ice bath. Can I pitch the yeast I just rehydrated later tonight?

Can I keep it covered at room temp, or should I put it in the fridge?

keep the yeast clean and near fermentation temps and you should be fine to pitch later tonight, also seal up the Wort to keep out any other nasties between now and then.

I did this last week-- the yeast is going gangbusters.
I rehydrated US 05 yeast, got busy (hosted football party) and pitched the rehydrated yeast the next morning. It was kept at room temps (low 60's).
