I'm on my second batch, my first in a 5 gallon, more legitimate kit then my first Mr. Beer batch. I noticed heavy bubbling from the airlock a day after beginning fermentation, but it has since stopped entirely. There is no foaming on the surface (krausen, right?), and I totally forgot to take an initial gravity reading. Currently it is reading 1.018 after just over a week. The kit is 'Walleye Weizen' from WindRiver Brewing Company. Quote from their site: "The kit includes: 6 lbs. Wheat malt extract, 1 oz. Tettnanger bitter hops, 1 oz. Tettnanger aroma hops, 1/2 lb. Carapils, yeast and priming sugar." (http://www.windriverbrew.com/wheatbeers.html)

I'm not sure if it fermenting still or not. If it is not, am I able to add in a second batch up ale yeast?

Thanks!

If it's 1.018, it's just about done fermenting. No need to add more yeast! Wait another week or so, and once the gravity is stable (no longer going down over a period of a couple of days), you can bottle it. I'd check the gravity about 2 weeks from brewday, and then again three days later. If they are the same, I'd bottle it!
