I have a mead that the SG has not changed on in over a week but when I shine a light through it there is so much bubble action it actually appears carbonated.
Would it be safe to bottle yet? Or will I end up with cases of bottle bombs?
 
I started this batch back in June.
At 6 weeks I racked it to a secondary with 1 gallon of Honeycrisp cider.
At the second racking I topped it with a honey/water mix to remove headspace.
Current SG is at 1.008 and has been for over a week.
 
I you just added more honey I would give it a while. There is not much yeast left but what's there could start munching on the honey anytime now. Maybe give it another couple weeks just to be sure. It sounds like it's going to be really good.
 
You racked it off the yeast and added fermentables. I'd wait a long time before bottling. A couple months wouldn't hurt. Mead fermentation can get really slow once the ABV is over 10-11%.
