Well, I was going to do a Chocolate Stout, but got side-tracked to an Irish Red Ale. I had a Smithwick's Ale before I made it to the HBS, and it went from there! I'll save the chocolate stout for Nov/Dec weather. :cool:

8.0 lbs Marris Otter Pale Malt
0.5 British Crystal (55)
4.0 oz Roasted Barley (British)
1 oz US Fuggles (Whole hops) @ 60
.25 US Goldings (Whole hops) @ 15
1/2 tsp Irish Moss @ 15 min
White Labs Irish Ale Yeast
1 qt starter w/ extra light DME

S.G. 1.045, 20.6 IBU's, 15.5 SRM.

75 min. boil, 5.5 gallons. should be a good session beer for the brutal July/August's we have here in Texas.........
 
I have an Irish Red in the secondary right now.

I used a recipe from a European styles book.

It contains 4 types of hops. It tastes a bit strange to me because of it. We'll see what time does.

The gravity is at 1.008 right now. I'll either have to bottle it this Sat or wait until I get back from Germany in 2 weeks. If I bottle now it may be ready when I return.

Since there are no holidays until the end of the summer I'll wait until I come back to bottle.

I too practice patience. :D
 
what did the grain bill look like? i looked at BYO and Zymurgy, and they all were about the same in SRM, IBU's, and SG's. they guy @ my HBS said it may be a little light, but according to Pro Mash, it's right on.

So, how did this turn out as a Smithwick's clone?
 
Converting the Marris Otter pale malt to DME = 5.5 lbs. and 6.5 lbs of LME. This is for a 5.5 gallon batch at OG of 1.048 or so. The rest is the same as you will have to steep the grains. Fuggle hops are calculated at 5 AAU. Hope this helps.
 
Uncanny, I was just trying to figure out what to make after I do a Sam Smiths Taddy porter knock-off. This just might be the ticket for using some harvested irsh ale yeast!

I think that it will work although I would probably add just a bit more hops. You will have to adjust them some if they are less AAU. Here is the way it looks run through Promash.
