Since I'm an Irish-American, I thought I might bring the two worlds together in yeast form. I did 2 separate yeast washes: one from a stout (Irish 004) and one from a light ale (S-05). I combined the two into a sterilized jar, added quite a bit of priming sugar/water solution, and let the yeast do what it does best.

It's been a week, and I've collected quite a bit of yeast (well, not a White Labs vile worth, but good by my standards). I wasn't sure if one yeast would overtake the other once fermentation started, or if they would coexist and ferment/multiply in harmony.

The yeasts can co-exist, but one may be dominant. MoreBeer has their own blend, a mix of WLP001 and WLP002. The description is quite interesting.

As for your blend, my semi-educated guess is you will get the fruitiness from the Irish Ale yeast, the S05 will gobble up any diacetyl that 1084 can produce, and you should have nice clarity.

If I were you and wanted to test it out I'd use the blend in a recipe you have already brewed to see how it compares.

My plan was to make the same Oatmeal stout recipe I recently brewed only using Irish 004. I'm hoping that what you described is what happens, as that is what I was going for.
