I originally posted this in the Extract section of the forum but woke up this morning realizing it would be better posted here.

Here's what I have:

~8lbs Pale LME
1/4lb crystal 30-40
1/4lb crystal 70
1 oz fuggles
1 oz willamette
a bunch (like, a lot) of NZ Hallertau
3 oz cascade
s-05 yeast

I will be brewing with a friend of mine on Sunday morning for the first time. (That is, I have brewed often but he has not brewed ever). He really likes beer and enjoys many different types of craft beers so is not afraid of styles. I had suggested an IPA to him and he totally agreed. I wanted something fairly high alcohol and high hops but it looks like I have a bit of noble/UK/US mix.

I do a full boil and can do soft or hard water.

Your suggestions and leads are much appreciated.

How about something like bittering with the NZ hallertau to like 40-50IBUs (since you have a bunch), then add 1oz of cascade at 10-15mins, flameout, and dry hop. You could also mix in the oz of willamette with the cascade adds.

Edit: Also, I'd add half your LME late to help with hop utilization
