My lady hates IPAs so far. She cites the "bitter aftertaste". She's into wheat beers. I get it, most of my favorite beers are not IPAs, but I also know that there's a vast array of territory under "IPA". She's willing to experiment, and I'm not ready to give up just yet! I think she'd be more amiable to an IPA with fruity citrus flavors. Looking for recommendations for an all grain IPA recipe on the lighter side with some flavors that compliment the heavier hops.

I was thinking the same thing, though in this case I'd tune the recipe for the 5s instead of the 7s-8s - more "pale ale" than "imperial" - given the wheat beer affinity. If she enjoys a low IBU, soft mouthfeel fruity pale for as long as it lasts she may better enjoy an imperial version...

Boy is there good news for her. The modern NEIPA is basically an incredibly aromatic hoppy wheat beer (or oats, depends on your school of thought). With some very good filtering, there is next to no bitterness/burn as the sweetness/mouthfeel balances out what little isomerized alpha acid, and harsher other bitter compounds like cohumulone. I'm always pleasantly surprised when a NEIPA is actually bitter, not just insanely hoppy.
 
Thanks GOA! There seems to be a solid consensus that NEIPA is the way to go. I just got some timely email spam from NB specifically about NEIPA kits they have available so I'll probably try one of those! Thanks also to Jag and DT for the replies!
 
My wife is very sensitive to bitter tastes and dislikes most IPAs if they have any decent amount of ibus, including pretty much any of the neipa I have had her try. I found she was most accepting of sour ipas as she does love sours and I think the lingering of the sour aftertaste cuts/distracts from the Bitter aftertaste of The hops.
 
Brew a NEIPA for her. I know a few who hate WC IPAs but love NE.

To supplementWhat Jag said. NEIPA’s are great, but I’ve had to many HB and professional NEIPAs that had serious hop burn going on.

I would actually suggest more of a SMaSH IPA thats hopped to the very low end using something like mosaic with most of the hops being late additions. I’ve done a few of these that my wife really enjoys. She cant stand IPAs otherwise
 
I'd go for something like a white IPA/hoppy witbier with fruity hops and maybe even tone down the bittering addition. lots of whirlpool/flameout hops, maybe just a 15 min addition and no 60 addition.

I liked this, and you could tone down the gravity and bittering addition

PS all flameout hops were in whirlpool for about 30 min at about 170
 
@tennesseean_87 Lol, that is so much hops. That recipe looks great, but damn thats a big hop bill. What software program did you use? Seems like those flameout hops should add a few IBUs

I use beersmith, and I add them this way because I don't feel like they add the perceived bitterness the software claims when added as whirlpool hops. This beer came out great, got good praise from my club, but didn't have a bitter bite to it, despite 75-100ppm sulfate used. Maybe I've just undergone lupulin threshold shift and am used to bitter beers (I was never a really big IPA guy, but I'm leaning more that way now--95 IBU DIPA with 12 total oz and same whirpool calculations as here so they don't inflate estimated IBUs). As always, YMMV based on your system and tastes. I use a hop spider and dryhop in a bag if that makes any sort of difference.

Maybe this would be closer to OP's needs. It also turned out well, but maybe lighter and/or less crystal and less IBUS from 60 min addition.

I’m certainly not a hop hwad but that looks like a good recipe. If it can come out as smooth as a Pliney or Heady Topper then its most certainly a winner.
