I'm on my third batch, trying a dunkelweizen. I just opened the top to the primary fermenter and this is what I saw:

Some background info:
Recipe - Dunkelweizen
Original Yeast - Danstar Munich
I had to re-pitch the yeast because the fermentation would not start after 4 days, so I had to pitch with what I had on hand which was muntons gold.

I kept the temperature at a constant 72 F for ~two weeks.

I'm not sure if it is infected or not. My first two brews (an amber ale and a nut brown) did not look anything like this.

Any help would be appreciated.

Thanks!

Hi there.

I work for the CDC. The proper method for disposing of this potential health risk is to wait 3 weeks or more, transfer to a secondary for a week, add corn sugar to a bottling bucket, put infected batch into bottles and send to an address forthcoming.

Seriously though, you're fine.

The bad kinds of infections 99.9% of the time are where either you don't see anythin or you might see a thin but pronounced white slick on the surface of the beer.

Carry on, soldier.

That is a common look for wheat beers. I have one in the fermenter at my gf's place. If I was there, I'd take a picture and show you how similar it is. Color, shape, size, etc. all the same.

Wheat beers always have a protein-rich "head" on top of the beer and it often doesn't settle out. If I gave you a picture of the hefeweizen I have fermenting right now, you'd probably die of shock :D

Thanks everyone for re-assuring me. I was hoping the answers you provided would be what you said - everything is OK and it's just something I hadn't seen before.

I have to admit - my first reaction when I opened it up was to dump it and I was even considering dumping the pail as well ;-) (Just another excuse for me to get a glass carboy for my primary ).

You don't store your fermenting bucket under the outhouse do you?........ with the lid off? :D

I hope it turns out okay. I tell most people that if they could see what beer looks like when it is fermenting, they would probably never drink it again. Not me. It is part of the magic.
