I made my first batch of coopers stout lme with 1 lb of dextrose and 1 lb of extra dark dme, it's early only a week in the bottle but the beer appears thin and dry, i think ill just hold out on the dextrose and use it for lighter beers next time.

1 lb of dextrose

corn sugar/dextrose is a simple sugar and will dry out almost anything you put it in

it is great if you are looking for a dry beer

not so good if you are looking for more body in your brew

I like it in a west coast style APA I want to finish dry, for a lighter beer I mash colder to get it to dry out

all the best

I'll agree that adding the dextrose would have thinned and dried out your stout but stouts change a lot over time and what you taste at one week is hardly a representative taste. Try this again at a month and notice the change. It will keep improving so don't rush to drink them all. Once of my stouts really hit its stride at a year and at 2 years it was like WOW!! I wish I hadn't drunk so many so soon.
