Personally I love hoppy/dry hopped stouts/imperials/russians. As for the specific hops, i have not heard specifically of any with chinook, but i know mikkeller does the Hop Geek Breakfast with columbus and simcoe. I am planning on doing a RIS and dry hopping it with columbus (hate the simcoe shortage).

As far as the vanilla aspect, it might be an interesting experiment to see how the vanilla and hoppy notes would meld together. It all depends how much experimenting you want to do with a beer that takes some time commitments.

Either way i would love to hear how this beer comes out.
 
To me it sounds like too many things going on. Dry hopped stout is something I've been wanting to brew since I had a fresh bottle of GI Night Stalker, but adding vanilla and oak to that seems like it would clash. Maybe dry hop half the batch?

I was thinking the same thing, especially with the later hop additions being done anyways.
