I've seen a few YouTube videos showing someone filling a keg from the secondary, setting the CO2, and drinking moments later. Is that accurate? I can take a beer from the secondary into the keg and drink it a few minutes later? I am brewing my next beer (the first one I will keg) tomorrow and am getting all warm and fuzzy :ban:
 
Nope, not accurate. A week to 10 days to let the carbonation come up naturally. If you absolutely have to have it sooner you can use the high pressure and shake method, but it is very difficult to hit the correct level, and you have to let the beer settle afterwords unless you want to pour all foam.
 
I am not a kegger so this is just my 2 cents ... everything in this hobby takes time to develop. Muddled flavors become crisp complex and deep over time. Let your beer condition! RDWHAHB!
 
You can drink it. You can also just get a straw and drink it right out of the fermenter. Just because you can doesn't mean you should!

Carbonated beer doesn't necessarily mean "finished" beer. Especially with shaking the keg- it'll be foamy and still green tasting with sediment mixed in.

You can set it in the kegerator at 12 psi for a week, and it'll be ready. But if you're in a huge hurry, you can set it in the kegerator at 30 psi for 36 hours, purge it and reset it at 12 psi. It'll be ready in 3 days or so, but still a bit green.
