SWMBO is out of the house, Baltic porter is in the kettle, have a nice big lager yeast cake to pitch it onto, and a cold snap on the way that will get my ghetto lager fermentation chamber temperature right in the sweet spot when I pitch tonight. I love it when a plan comes together.

I'm a tad envious!
 
TC I'd love to raise a pint with you sometime. Strictly above board with so's and such.

That's a great idea. I don't know too many folks in the area yet and it would be good to get out and meet some people. I don't know if the missus can be drawn out, but my schedule is pretty open and flexible through the end of February.
 
Baltic porter is definitely a style I want to do one day - good job TC! I also brewed today - a much deferred turbid mash for a lambic-style sour. A long (and challenging) brew day, but very enjoyable and it all went very well. I love sours. Lambic style is in my future, if/when I can get the space and gear to do them properly. I tried a Berliner Weisse last summer that turned into a Petri dish and had to be dumped, but I plan to try that again this summer when I get some good heat for the lacto to grow. BW's are about the only beer I can manage all grain with my current setup.

Its the unknown and new things in life that drive us forward. I can remember leaving the only place i new to be home for an out of town college. Exciting and challenging and nerve racking. I can remember asking my now wife out on our first date. She told me later I mumbled and didn't make much since. She is still listening to my mumbling 33 yrs later (38 if you the dating). It will work out Dan, you know it will. It has for all of us. May not seem like it at first but you will survive and flourish.

Are you able to get out and try the local breweries ? Perennial on the south side of the city is doing some good stuff, Schlafly is also worth a stop.

Yea, some work friends just took me out. I had a Schlafly pale ale that was good and a something-or-other Rye IPA that was not memorable. Some really good people here, I would not have enjoyed it less if we were drinking bud.

I have been cooking lately. It seems I have not been in the mood for a few months. Last night I did a baked rice/cod thing that turned out great. Tonight, I just grilled some nice grass fed steaks that Bob and Yooper gave us for cat sitting. I got a bit extra char but they were still awesome. Those pretzels look great and that kraut is making me drool. The kraut is making me think of kimchi. I took last spring off but I will be making a batch in a few months. Here is a pic of my 2012 batch. I think that was at least 4 gallons and none went to waste. I still have enough Korean pepper flakes for a good size batch. I think they were key. Great color and not overwhelming heat.

Argggh! I got seriously stiffed by a co-worker today and I feel like smashing things now. I hate people that would willingly look stupid or inept to avoid a little extra work and dump it on someone else. It's a sign that they don't really give a damn about what they do. And worse, it is a sign that they don't give a damn about their reputation amongst colleagues. In any other profession it might get a pass, but in education this is just inexcusable.

OK, got that off my chest...a few deep breaths. I am house-bound in a snowstorm, angry at some select segments of humanity; I need some music. Help me!

Thank you. It was not quite what my 2011 batch was and that pic is still early in the ferment. I did the best I could to follow the recipe from here:

I left out the squid and had to substitute a few things that I could not find. It takes a few hours of chopping and soaking but is well worth it.

I made her's too. But my pepper flakes were the wrong kind and mine turned out brown instead of read. I since have picked up the right stuff (oriental market). I must make again.

I have never tasted anything like the korean pepper flakes I used. It certainly would not have been the same without them.

Here is my first and best batch of two so far, 2011. Just look at that yummy juice...
