I generally do about a six pack in 12oz bottles and the rest in bombers so I can taste the beers as they mature. I've generally found most beers that I've brewed to be drinkable and properly carbonated after a week, though I know this isn't true with all beer styles. You can certainly taste a big difference between a week and three, though! Happy brewing!

I think this depends on the yeast. Notty is fast, however, some liquids that I have used are barely carbed up after 3 weeks.
 
We've all done that (popped an early brew). I still do. sometimes, I like my green beer better than my properly aged brews.....
