I recently had someone tell me that a recent dark mild I made had a great grainy/chocolate taste in the middle, but it was lacking much flavor in the finish. What ingredients and/or techniques can increase the finish? I'm not concerned about this recipe for the dark mild, it's just more of a general question.

yeast selection and handling is the #1 factor I think \affects the finish. Water chemistry plays a large role too, but I might rule that out if your other beers arent coming out like that

What was your FG? It sounds to me it probably just finished dry. My thought would be to mash higher. Personally, I like my beers dry.
