I need to make a 2L 1.055 gravity yeast starter. How much water and dme do I
need?

You should keep your starter gravity around 1.030 so the yeast is not overwhelmed. To achieve this the math is simple 10 grams of DME for every 100mL of water, so 100g for a 1L starter and so on.

If you still want to make a 2L 1.055 starter the you will need 300g of DME

Check out http://www.yeastcalculator.com/. it has a DME calculator on the left side.
