Never had a problem with scorching since I got my double wall steamer kettle. Practically don't have to stir. I thought the HERMS though was more about the mash. Something mostly you would use to control a step infusion process easier.

Never mind all of that, I guess I've taken the topic off course, sorry. I'll butt out.
 
I just stated brewing in september and so far I have made:

5G what I call Ridgecrest Crud (My first try)
3g Mr. Beer wheat ale
5g Procrastinator Bock (Which end up being 4G lesson learned about evaporation)
5G Strawberry Blond

5G Pumpkin Ale

Not a bad start for only brewing for 3 months. 2011 will be a good year.:ban:

I have 5 gals of Bigfoots barleywine from Midwest in 2ndary, and getting ready to brew a steam beer from Midwest.
This was my first year. I hope to increase the volume next year.
